This cuvée comes from purchases of grapes or wine from winegrowers in the Aude.
100% Pinot Noir, the grapes are placed in tanks by gravity. A pre-fermentation maceration at low temperature is carried out for 4 to 5 days. Daily and gentle punching down is carried out and promotes the release of aromas. The temperatures are controlled so as not to exceed 25 ° C. Fermentation lasts ten days. Half of this cuvée is sown in French oak barrels and the other part continues aging in stainless steel vats. Malolactic fermentation and aging takes place in vats and barrels until June following the harvest.
A light red wine with garnet reflections. Expressive nose of cherry and spices. The mouth presents a nice attack, the wine is full, on the fruit. The finish is silky, fresh and persistent on stone fruits. Drink within 3 years.
