Closerie des Lys is made by Collovray and Terrier from grapes mainly from the upper Aude valley in Languedoc. The majority of the plots are located south of Carcassonne near Limoux. In the south of France, this small region is best suited to the production of aromatic grapes with good acidity.
The grapes (1/3 each variety: Cinsault, Grenache and Syrah) are pressed as soon as they arrive in the cellar. The filling of the presses is carried out by gravity. The juices are clarified at low temperature and the vinification takes place in vats. Alcoholic fermentation takes place at low temperature (18 ° C) and malolactic fermentation is sought.
